From the office of steward — literally ‘sty-ward’, the keeper of the household — which in Scotland became the hereditary post of High Steward. The office gave the family its name rather than the other way round.
The spelling Stuart is the French form, adopted because French has no w. Both spellings are equally old in practice and neither is the ‘real’ one.
